Comté is a unique cheese. Its yellow paste with brown reflections is sometimes perceived as slightly crumbly but always very melting. White grains (crystals of an amino acid, tyrosine) can be seen in the paste and crackle under the tooth. This Comté is intended for connoisseurs, lovers of strongly typified tastes and are suitable for for non-meal tastings.
