Farmhouse Saint-Nectaire is produced daily on the farms, from the raw milk of the cows directly after milking. In the cellar, they are rubbed by hand and turned every week to obtain a natural grey rind. Saint Nectaire cheese is matured for a minimum of 6 weeks in a damp cellar on a bed of rye straw, with scraping of the rind.
