This truffle cheese is made in Spain in the region of Albacete. Unlike most truffled cheeses, it is after the cheese is made that a truffle paste (containing 5% summer truffles) is injected into the paste. It is then matured for a minimum of 4 months. This method allows the cheese to develop its own character and a powerful aroma.
