Comté is a unique cheese. Its yellow paste with brown reflections is sometimes perceived as slightly crumbly but always very melting. One can distinguish in the dough white grains (crystals of an amino acid, tyrosine) which crack under the tooth. Comté intended for connoisseurs, lovers of strongly distinctive tastes and suitable for non-meal tastings.
