Persillé de Chèvre is a cheese similar in size to that of a Tomme cheese. Its ashy rind, which looks dry but slightly moist, has a creamy paste with a very nice distribution of blue. It will seduce you with its soft texture and its blend of flavors, halfway between notes of goat cheese and blue cheese.
