Its rind, ivory in color, is fine and vermiculated. It is slightly damp and it is covered with a light and homogeneous white down. Its paste, white in color, is dense, homogeneous and soft. On the nose, Briquette Paulinetoise offers an animal and straw smell.
This cheese is made from raw farm milk and is therefore subject to natural mold. The Penicillium mold contributes to its identity and typicality.
