The cheese made from June 1 to October 30 bears the mention Beaufort d'été AOP. It is made from milk produced in the mountain pastures, and brought back down to the valleys to be processed at the Cooperative. The cows then feast on various herbs and flowers (Alpine Clover, Bear's Ears, Violets, etc.). Summer Beaufort is pale yellow in color. After several months of maturing, it will be tasted mainly during the winter.
