Varietal (s): 100% Chardonnay
Vinification: Manual harvest, the grapes are pressed slowly. A static settling, little pushed in order to keep a maximum of material, is realized before the fermentation, it often very long. The latter occurs through indigenous yeasts naturally present on the grapes. No addition of product except that of sulphites (meticulously) does not disturb the birth of this wine. This cuvée is usually bottled at the end of August after aging for almost a year for 60% in barrels and 40% in stainless steel vats.
Tasting Note: Intense golden yellow color. The nose of great complexity is carried by aromas of exotic fruits, brioche and plum jam. Nice and clean attack and evolves on a powerful mid-palate, on the fruit, the brioche and a mentholated note. The finish is balanced between roundness, minerality and salinity and an impressive persistence. A very big white Burgundy
